Grape Variety

100% Merlot.

Vineyard

Situated in the Comune of San Gimignano in the Santo Pietro a Pancole area. South/south-west aspect. The vines are trained 80 cm off the ground using a spurred cordon system. Yields are kept to a minimum (70 quintals per hectare).

Vinification

Red-winemaking method involving initial cryomaceration for 4-6 days, followed by 15-20 days of fermentation at a controlled temperature of 25-30 °C. This is followed by fermentation in barriques.

Ageing

12 months in French-oak barriques and at least 6 months bottle-ageing.

The wine

Deep and intense ruby-red colour; dominant notes of red-berried fruit, tobacco and a touch of bitter cocoa; a smooth, lingering flavour with well balanced tannins.

100% Sangiovese grosso.

Vineyard

Selected grapes from the estate's vineyards in the Santo Pietro a Pancole area. Trained using the Guyot and spurred cordon systems, the vines have very low per-hectare yields.

Vinification

The grapes are harvested in October, and maceration lasts 10 days, with skin contact and frequent pumping over. This is followed by at least 3 months in stainless steel vats.

The wine

Bright, ruby-red colour, with pronounced raspberry and blackberry aromas; dry, full taste, with pleasing red-berried jammy flavours. Long finish.

VERNACCIA DI S. GIMIGNANO "IL CEPPETO"

Grape Variety

100% Vernaccia di San Gimignano.

Vineyard

Selected vines sited 250 metres above sea level in the Santo Pietro a Pancole area. The vines grow on tuffaceous terrain and are trained using the Guyot system.

Vinification

Gentle pressing is followed by 24 hours of cryomaceration during which the skins are in contact with the grape juice. After the skins are separated out, fermentation takes place in barrique barrels.

Ageing

6 months in French-oak barriques being used for the first or second time. This is followed by an appropriate period of bottle-ageing.

The wine

Bright, light golden colour; intense aromas with floral notes of broom and lime-blossom; full, crisp and lively flavour with an elegantly fruity, spicy finish.

VIN SANTO

Vin Santo di San Gimignano is one of Italy's best-known dried grape wines. It has always been a 'family' wine, and is a wonderful accompaniment for those sweet festive occasions.

The great variety of healthy grapes used, the microclimate of the estate, the large hall used to raisin the grapes and the loving care it takes to make this wine are fundamental for obtaining an ideal Vin Santo.

Besides being a pleasant companion to conversation, our Vin Santo is a natural match for all the region's baked sweets.

TOSCANA I.G.T.

Grape Variety

50% Sangiovese 50% Merlot.

Vineyard

Recently planted (5 years ago) and sited at 300 mt. above sea level.

Vinification

Fully ripe grapes harvested at the end of September, first the Merlot followed by Sangiovese. Vinification takes place separately, with a long maceration with skin contact (15/20 days). The wine is then blended and refined for a short time in small oak barrels. A proper refining follows.

The wine

Very intense ruby red colour, remarkable fruity flavour with scent of ripe berries. Dry at the taste, with a pleasing mildness, with an inkling of ripe cherry and blackberry.

Combinings

Grilled meat and mild seasoned cheese.

VERNACCIA DI S. GIMIGNANO

Grape Variety

100% Vernaccia di San Gimignano.

Vineyard

Situated in the Comune of San Gimignano in the Santo Pietro a Pancole area. The vines grow on sandy and clayey terrains which take their origin from the Plyocenic age.

Vinification

Following the harvest, in the early days of September, wine making takes place in steel vats at controlled temperature (16/18° C) after cryomaceration for 18/20 hours. After bottle refining the wine is commecialized.

The wine

Santo Pietro Vernaccia shows a fairly pale straw-coloured yellow, with greenish hues. Rich bouquet, fresh and delicate with hints of gorse and lime tree, followed by a fruity sensation. Balanced taste, dry, fragrant, with the right acidity.

Combinings

Ideal as an aperitif, it can be combined with fish courses and grilled poultry.

OLIVE OIL

Situated as it is in the hills of central Tuscany, the Fattorie di Santo Pietro lies in one of Italy's best olive-growing areas. The olives, which come from trees planted in prime olive-growing areas, are harvested early. They are hand-picked directly from the trees.

The olives are kept for a strictly limited period before being cold-pressed. The result is this extra virgin olive oil, which contains the aromas and sunshine of Tuscany and one of the lowest degrees of acidity to be found in fine olive oils.
